Chicken Toastizza





Few days back,I went to the hospital for regular checkup,suddenly I got very hungry.
I was looking for a food shop nearby but could not see anything else except Cafe Coffee Day.
Then I decided to go to CCD to buy something to eat.There were so many items like sandwiches, toasts, pizzas, cakes kept in the showcase of the store,among all I liked chicken toastizza.It was very yuumy and tasty.Though I do not know the exact recipe of that item,but  after eating the food, I guessed how it was made.It is nothing but a pizza flavoured crispy chicken toast.So here I am presenting my guessing recipe☺☺of Chicken Toastizza.

Ingredients

  • Bread Loaf-1(cut halved lengthwise,after that cut each half portion into two pieces)
  • Chicken Keema/Minced Chicken-2 cup 
  • Onion-1(chopped)
  • Capsicum-1(chopped)
  • Tomato-1(chopped)
  • Salt to taste
  • Pepper-1/2teaspoon
  • Oil-1tablespoon
  • Oregano-1teaspoon+1/2 teaspoon
  • Tomato Sauce-2teaspoons
  • Butter-2tablespoons.
  • Garlic-4 cloves (minced) 
  • Cheeseslices-4
  • Mayonnaise-4tablespoons


Method


  • Heat oil in a pan
  • Add chopped onion,fry until light brown
  • Add chopped capsicum,tomato,mix all the vegetables and stir
  • Add chicken keema,mix and stir
  • Add salt and pepper ,mix,continiously keep stirring
  • Cook on medium flame until the keema is cooked properly
  • Add tomato sauce, 1 teaspoon oregano and mix
  • Switch off the heat,keep aside the keema mixture from heat,let the mixture comes to room temperature
  • Add keema mixture into a bowl,then add mayonnaise and mix properly
  • Preheat the oven at 200 degree C
  • Heat garlic and butter in microwave for 1 minute
  • Spread this garlic butter on the top of each bread portion
  • Then add keema mayonnaise mixture on bread,spread with butter knief
  • Sprinkle red chili flakes,remaining oregano
  • Put a cheese slice on  each bread portion
  • Toast all bread in the oven till cheese bubbles and turn a light golden.
  • Remove from the oven 
  • Serve hot with tomato sauce.

Tips
If you do not have oven,you can also make it on gas stove.Heat a Tawa on low flame,add the chicken toast  on tawa,cover with lid,cook on low flame until cheese bubbles and turn light golden.

Cheesy Chicken Ala Kiev





Chicken Ala Kiev Recipe  is one of the popular appetisers of Russia,Ukraine and East Europe.Here tender juicy chicken breast is thinly sliced, flattened and then garlic herbed butter goes inside the chicken as a filling and these chicken rolls are then dipped  in a coating of flour, egg and breadcrumbs  and fried after a gooey filling added to it. 
It is the traditional way of making chicken ala kiev.The original chicken ala Kiev has a bone that sticks out like a handle(just for presentation).Here I added some mozzarella cheese with the herbed garlic butter fillings to make it more tastier and also did not cook with bone. This dish can be so appetizing snacks recipe  for your parties and get togethers.

Ingredients
--------------------

Chicken breasts
  • 1/2 cup Vegetable Oil , to fry
  • Whole Eggs
  • 1/2 cup All Purpose Flour (Maida)
  • 1 cup Bread crumbs
  • 1 cup Butter
  • 2 tablespoons Garlic , minced
  • 1 teaspoon Red Chilli flakes , (optional)
  • Salt , to taste
  • Black pepper powder , to taste
  • 1/4 cup Parsley leaves
  • 1 cup Mozzarella cheese , grated
Method

To begin making Cheesy Chicken Ala Kiev Recipe (Chicken With Garlic Cheese), in a mixing bowl, combine butter, chopped parsley, red chilli flakes (if using) and minced garlic. Mix well with a fork till the flavours are incorporated well into the butter

Then keep this bowl in the refrigerator for about 10 minutes or until a bit firm.

Cut each chicken breast into equally thin to about four pieces and then using a rolling pin roll them out to make them flat.

Sprinkle some salt and pepper over the chicken breasts.

Take out the butter from fridge, place about 2 tablespoons of butter mixture in the centre of each rolled out chicken breast. Also add about 2 tablespoons of grated mozzarella cheese on each chicken breast piece, roll each chicken breast tightly to seal the edges.

Keep them on a tray, cover with plate and refrigerate for about 10 minutes.

Once the refrigeration is done, coat the rolled chicken breast with flour. Dip in the bowl containing whisked eggs and then coat with breadcrumbs. Repeat the same process once more to get each chicken breast more crispy Chicken Kiev.

Take every Do the process with remaining chicken breasts. Cover the plate with aluminium foil or a plate and keep in the refrigerator for 20 -30 minutes.

Place oil in a non-stick frying pan to cover the base. Heat over medium heat.Add pinch of salt (when you deep fry something, add pinch of salt in oil, the recipe absorbs less oil is what is believed).

Heat oil in a pan and deep fry the chicken  pieces on low flame  till golden brown and crisp. Drain on absorbent paper/kitchen towel. Cook the remaining chicken breasts in the same way.

Serve Cheesy Chicken Ala Kiev with salad,
tomato ketchup and mayonnaise.

crispy fried chicken



One day I told my husband to bring chicken from market and he bought 2 kilos chicken for us 3.Regular chicken curry with 2 kilos chicken--a big No from my daughter side. So then I  decided to make these Crispy Fried Chicken .There's nothing better than crispy, seasoned, juicy, and succulent fried chicken. Mmmm, is your mouth watering????
There is lots of recipes you will get of crispy fried chicken,among them most popular  are American crispy  chicken,Chinese  crispy fried chicken,Korean  Fried Chicken  and many more.Here I did not follow  any traditional  recipe.I made it using easily  available  ingredients  at home.

Ingredients for  marination

Chicken pieces-4 (medium )
Fresh cream-1/2 cup
Mayonnaise -1/4 cup
Red chili sauce-1teaspoon
Salt to taste
Black pepper powder - 1 teaspoon
Ginger paste-1 teaspoon
Garlic paste- 1 teaspoon

Ingredients  for coating 

All purpose flour-1 cup
Chili flakes(crushed )-1 teaspoon
Garlic powder -1 teaspoons
Salt to taste
Eggs-2, beaten

Ingredients  for frying 

Vegetable oil -2 cups
Salt-1 pinch


Method
------------

Take a large bowl, combine  fresh cream, mayonnaise, red chili sauce,ginger paste,garlic paste,salt and black pepper ,mix well.

Add chicken  pieces,mix them until chicken  pieces get coated with this mixture properly. Keep in refrigerator for 1 hour.

Place the flour, crushed red chili flakes ,garlic powder  and little  bit salt  in a big bowl.

Place eggs in a separate bowl and beat them properly.

Take out the marinated  chicken  from fridge.

Take one by one chicken  pieces and follow the process.

You have to do it in batches .Do not put all the chicken  pieces  together. Coat  the chicken piece with flour,then dip into egg mixture and lastly coat again with flour properly. Repeat  the process with the remaining chicken pieces.  Cover the plate with aluminium foil or a plate and keep in the refrigerator for 15-20 minutes.

Place oil in a wok . Heat over medium flame.Add pinch of salt (when you deep fry something,add pinch of salt in oil,it absorb lees oil)

Add  coated chicken  piece( number of chicken pieces depend on the size of your frying pan  ) in oil and deep fry on low  flame until  both the sides are golden color. Take them out from pan and place them on kitchen paper. Cook the remaining chicken pieces  in batches .

Serve hot with  tomato  sauce  and homemade french fries.

INGREDIENTS 

Boneless  Chicken  Breasts -2
Vegetable  oil for frying -1/2 cup
Eggs-2
Refined  Flour-1/2 cup
Corn flakes-1cup (grind  to make a fine powder )
Butter-1 cup
Garlic -2 tablespoons  (minced )
chilli flakes -1 teaspoon ( optional )
Salt to taste
Black pepper - 2 pinch
Fresh Parsley leaves (chopped ) -1/4 cup

METHOD 
Combine  butter,chopped parsley,chilli flakes  and garlic in bowl and  mix  well with fork.Then keep this bowl in refrigerator  for 10 minutes.

Cut the each chicken  breast  in half,  and then using a sharp knife, slit each half cut chicken breast and open it.

Sprinkle  some salt and pepper over the slited chicken breasts.

Take out the butter from fridge,Place 2 tablespoons  of  butter  mixture  in the centre of the chicken  breasts  and roll tightly to seal the edges . Repeat  the  process  with  the  remaining  chicken  breasts. Keep them in a tray,cover with plate  and refrigerate  for 10 minutes.


Coat the  chicken breast with flour. Dip in the whisked eggs and then coat with grounded cornflakes and repeat the same process once more to get more crispy Chicken Kiev. . Do  the process  with remaining chicken breasts . Cover the plate with aluminium foil or a plate and keep in the refrigerator for 20 -30 minutes.

Place oil in a non-stick frying pan to cover the base. Heat over medium heat.Add pinch of salt (when you deep fry something,add pinch of salt in oil,it absorb lees oil)

Heat oil in a pan and deep fry  the  chicken  pieces on low flame  till golden  brown  and crisp . Drain on absorbent paper.Cook the  remaining  chicken breasts  in the same  way.


Serve hot with steamed vegetables and mashed   potatoes.

PICTORIAL  RECIPE

                    Take 100 grams butter in a bowl
              Add chopped  parsley or coriander leaves 
       Add chilli flakes  in the butter and mix it with fork.               and keep in the refrigerator  for 10 minutes 
                     Slit the half cut chicken  breast 
        Sprinkle salt and black  pepper  on the chicken.                                         breasts from top
   Place cold garlic butter in the centre of the breast
Roll tightly  to  seal  the  edges, keep them in a.    tray,cover the tray and refrigerate  for  10 minutes 
Coat the  chicken breast with flour. Dip in the whisked eggs and then coat with grounded cornflakes and repeat the same process once more to get more crispy Chicken Kiev.
Keep the prepared  chicken  kiev in a plate and cover the plate  with  plastic  wrap  or plate and refrigerate  for 30 minutes and then deep fry in the oil.

Cheesy Chicken Bites







These tasty Cheesy Chicken Bites are tasty as well as healthy .This simple  recipe is made with chicken breast,mozzarella cheese, crunchy grounded  cornflakes and a dash of seasoning.These protein-loaded little bites are perfect for snacking for school lunch box or even after school  or as a party appetizer . Small kids along with big kids will love to have them.

Mozzarella  cheese -3/4 cup grated
Mayonnaise -1/4 cup
Salt to taste
Black pepper powder - 1 teaspoon
Chilli flakes -1 teaspoon
Garlic paste -2 teaspoons
Flour-1/2 cup
Large eggs-2, beaten
Cornflakes-2 cups (grind to make a fine powder)


Method
---------

Take a large bowl, combine   mayonnaise,     mozzarella cheese,  garlic paste,salt,black pepper and chill flakes, mix well.

Add chicken  pieces,mix them until chicken  pieces get coated with this mixture properly. Keep in refrigerator for 30 minutes .

Place the flour and powdered corn flakes in two wide  separate plates

Place eggs in a separate bowl and beat them properly.

Take out the marinated  chicken  from fridge.

Take one by one chicken  pieces and follow the process.

You have to do it in batches .Do not put all the chicken  pieces  together. Coat  the chicken piece with flour,then dip into egg mixture and lastly coat with powdered cornflakes  properly. Repeat  the process with the remaining chicken pieces.  Cover the plate with aluminium foil or a plate and keep in the refrigerator for 20 -30 minutes.

Place oil in a non-stick frying pan to cover the base. Heat over medium heat.Add pinch of salt (when you deep fry something,add pinch of salt in oil,it absorb lees oil)

Add 4 to 5 coated chicken  pieces(according to the size of your frying pan  ) in oil and deep fry on medium flame until golden brown colour.Take them out from pan and place them on kitchen paper Cook the remaining  chicken pieces  in batches .

Your Cheesy Chicken Bites are ready to serve, serve hot with English mustard or any other dip.

Kolkata Style Chicken Biriyani





               Kolkatta style Chicken Biriyani
Chicken Biriyani is a rice based dish cooked with spices and chicken  . Biriyani comes from the Persian word BERYA (N) which means fried or roasted.Each region of India has its own style of making Biriyani. ..mainly Kashmir,  Hydrabad, Malabar, Kolkata, Lucknow, Delhi, Agra are the main centres of Biriyani.
Today i am going to share the recipe of Kolkata Style Chicken Biriyani. ...Kolkata biriyani is inspired by Lucknow biriyani.....it is served with  fried potato and boiled egg.

This Biriyani  is really special  for me as it was cooked  by my  hubby.He loves cooking, prefers to enter into the kitchen on weekends. .first time he tried his hands on Biriyani. .and believe me,it came out so perfect and taste was also superb.

                       


Ingredients For Meat
-----------------------------------

  • Chicken-500 gms
  • Yogurt-1/2cup
  • Onion -2 ( chopped )
  • Ginger paste -1tbsp
  • Garlic Paste-2tbsp
  • Turmeric powder -1tsp
  • Coriander powder - 1tsp
  • Red chilly powder - 2tsp
  • Garam masala powder-1tsp (chinamon stick -1 inch, cloves -2, green coriander-2...grind all to make a fine powder)
  • Bay leaf-1
  • Oil -1 tsp (for marinating )
  • Oil-1/2 cup for cooking
  • Salt to taste
  • Water
Method of making Chicken
---------------------------------------------

  • Marinate chicken with Yougurt, oil, all spices powder,1/2 tsp ginger and 1/2 tsp garlic, salt for 2hrs in the fridge
  • After 2hrs, take out the chicken from fridge, heat oil in a pan.add bay leaf....chopped  onions.fry till golden brown
  • Add remaining ginger garlic paste...fry until oil gets separate into the water
  • Add marinated Chicken....saute it....add salt... cook on medium flame. ..Add 2cups water...cook  until 3/4part of chicken is done...chicken gravy should be watery....atleast 1 cup
  • Separate chicken and gravy into two bowls
          
Ingredients For Rice
----------------------------------
  • Basmati Rice -2cups washed and soaked in water for 15 minutes
  • Green Cardamom - 3
  • Black Cardamom - 2
  • Cloves - 2
  • Chinamon stick - 1inch
  • Star Anise-1
  • Oil -2sp
  • Salt to taste
How to make Biriyani Rice
-------------------------------------------

  • Take a small piece of cloth, put all garam masala and tie a knot to make potli. .
  • Take a big pan. .add 4 cups of water..put potli bag..oil and salt
  • Bring it to boil, when the water will start boiling. ..add rice...cook the rice till 3/4th done..drain and spread on a tray
How to make Biriyani Garam Masala
-------------------------------------------------------------

  • Chinamon Stick -1 inch
  • Green Cardamom - 4
  • Black cardamom-2
  • Cloves-4
  • Nutmeg -1
  • Sha Jeera-1/2 teaspoon 
  • Black pepper corn -3
  • Mace-1tsp
  • Star anise-2
Roast all the spices in a pan. ..let them cool  and grind to make a fine powder

How to make Fried Potato  and Fried Boiled Egg
------------------------------------------------------------------------------

Boil potato...cut into halves...and then fry..keep aside
Boil egg and then fry

How to make Fried Onions or Barista
--------------------------------------------------------------
Slice the onions(preferably 1) .separate the slices. ..then fry until golden brown


Ingredients of layers to make Biriyani
-------------------------------------------------------------
  • Cooked Biriyani Rice
  • Cooked Chicken
  • Chicken Gravy 
  • Chicken pieces
  • Milk-1cups
  • Saffron (soaked in water )
  • Biriyani Masala
  • Rose Water-1tsp
  • Kewra essence-2drops
  • Fried onions
  • Ghee--1/2cup 
  • Salt
  • Khoa-2tbsp
How to Make Layer
--------------------------------

  • Take a large heavy bottom pan. ..
  •  Add ghee....add  1/2  portion garam masala
  • Add Chicken Gravy 
  • Add 1/2cup milk.....mix well..
  • Add cooked chicken pieces...mix it well. .
  • Add salt ...boiled potatoes
  • Add 
  • Add 1/2 portion of cooked Rice....diluted saffron...rose water and Kewra essence....oi
  • Add grated khoya
  • Add remaining rice...1/2 cup milk....
  • Add boiled eggs
Cover the pan with lid and seal it with atta dough or wet cloth.
Place a thick bottomed tawa on gas stove....keep the biriyani vessel on this tawa...cook for medium flow for 10 minutes...turn off the gas. .let the biriyani stand for another 10 minutes. ..cut the seal ...and sprinkle 2tsp ghee on top...garnish with boiled fried eggs and potatoes. 
....donot mix...otherwise cannot get the both the colour (white and yellow) together. ...serve from each row. ...
