Red Velvet Cake Balls
After a long time I am here, I was busy with some personal issues. Today I am going to share Cake Balls.It’s a pretty easy process and I promise you wont regret it . First you have to bake any cake ( I baked red velvet cake as it is my daughter's favourite ). Then let it cool and crumb it into tiny pieces, Mixed it with the butter ,powdered or icing sugar and cream cheese and then form into balls. After forming the balls refrigerate them and then dip them in melted chocolate.
If you have any leftover cake in fridge then you can make these cake balls also using these leftover cake.I prefer to call it disaster relief cake as when my cake does not turn out well, I love to make these super delicious cake balls using those messy cake.

INGREDIENTS FOR RED VELVET CAKE
Unsalted butter-2tbsp (for grease the cake pan)
Cake flour or maida -1cup (not self-rising)
Granulated sugar-1cup
Vegetable oil -1/2cup
large eggs-2(Vegeterian people can use 1/4cup beaten yoghurt)
Red food colouring-few drops
Vanilla essence -1tsp
Milk-1/2cup (room tempreture)
Baking soda-1/2 tsp
Baking Powder-1.5tsp
METHOD
Heat oven to 350 degrees F or 180 degreeC.
Grease butter the cake pan.
In a medium bowl, whisk cake flour, baking powder and baking soda ....set aside.
In another bowl combine the sugar and oil, and beat until well combined. Add eggs, one at a time, beating well after each addition.
Add vanilla and milk and beat until well combined. Add flour mixture slowly scraping the sides of the bowl with a spatula as needed.
Mix red food colur with the batter.
Pour the batter into greased cake pan.
Tap the pan .
Bake for 25 to 30 minutes or until a toothpick inserted comes out clean
Remove from oven and let cool for 30 minutes. please do not skip this step because the cake needs to be cool.
INGREDIENTS OF MAKING RED VELVET CAKE BALLS
Red velvet cake -1
Cream Cheese -1/2cup
Butter (softened )-1/2 cup
Vanilla essence - few drops
Powdered sugar or Icing sugar-3/4cup
Cooking chocolate -1cup (I don't have dark chocolate so I used pink chocolate, if you want you can use dark chocolate )
Colourfull Sprinkles-1/2cup (optional )
METHOD OF MAKING RED VELVET CAKE BALLS
Remove cream cheese from fridge.
In a medium bowl pour the cream cheese, butter,sugar and vanilla. Mix with whisk for 2-3 minutes until the mixture begins to solidify and does not have any more lumps. Set aside.
Crumb the cooled cake into tiny pieces . Pour the cream cheese butter mixture on the crumb cake and mix together with a spoon or spatula until everything is well combined.
Line a tray with wax paper or or foil. With a spoon take small portion of mixture and make 1 inch balls by hand. After all the balls are formed,cover the tray with plastic wrap and place in the freezer for 15 minutes.
While the balls are in the freezer melt the chocolate in the microwave in 30 second increments, stirring between increments, until smooth. Remove the balls from the freezer and dip each ball into the chocolate mixture and place on pan.Spread sprinkles on top of the cake balls and keep them in refrigerator for 30 minutes.Afrer that take out from refrigerator and enjoy.
TIPS
1)If you want to melt chocolate on gas stove,then follow this step.
Bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn't touch the bottom of the bowl. Stir chocolate occasionally as it softens. When you have just a few small unmelted chunks, remove bowl from heat and stir with fork.
2) If you do not have cream cheese at home then you can use 3/4 cup butter instead of (1/2 butter+ 1/2cup cream cheese )
