Virgin Mojito Popsicle






Mojito is basically a alchohol based drink but a mojito that does not have alchohol in it is a virgin mojito. 
It is very popular refreshing drink in  a hot summer afternoon or it can be a perfect mocktail of your summer party.Now my daughter's summer vacation is going on,just to give her a cool treat I decided to make a nice virgin mojito version in popsicle form.

Ingredients

Mint leaves-15 to 20
Lemon Juice-1/4+1/4 cup
Sprite-300 ml
Sugar-2teaspoon(superfine)(Grind normal sugar in a grinder to get superfine sugar.)

Method
---------------


In a small bowl, muddle 3/4 th mint leaves.


Add sugar and lime juice and whisk to combine.

Pour mixture into your blender and run on low until mint is roughly chopped.

Turn blender off and mix in sprite


Drop mint leaves (if desired) into your molds.

Pour your vigin mojito into the molds and freeze for minimum 2 hours.



Enjoy on a nice hot day with these pepsicole.



Orange Icecream




We can not think a hot summer's day without some ice cream,fresh fruit juice,soft drink,Popsicle etc. 


Few days back I had some oranges in my fridge.These were the last batch of oranges of this year,so I thought of making something which we generally can't make in winter. Ice cream is a favourite treat for my daughter,so I made some orange ice cream using fresh orange juice and orange zest.Homemade ice cream is delicious,healthy and surprisingly easy to make .You will love these tangy,creamy orange ice cream.

Preparation Time-15 Minutes
Setting Time-Overnight
Servings-10 scoops

INGREDIENTS

  • 11/2 cups cream
  • 3/4 cup condensed milk
  • 1 cup freshly squeezed orange juice (strain to remove pulp)
  • 1 tablespoons orange zest
  • Yellow food colour-1 drop
  • Red food colour-1drop(both are optional)

Method
  • Whisk all the ingredients together until creamy texture  and soft peaks form.
  • Pour the mixture into a flat base container,cover with  lid,aluminium foil or cling film wrap.
  • Freeze for overnight. Serve straight from the freezer.If you see some ice crystal in your icecream,then put in the grinder,grind and again pour in the container,Cover with aluminum foil,freeze for 3 to 4 hours.Then serve.
  • Drizzle some Orange juice from top .






How to make Orange Syrup

INGREDIENTS







  • 1/2 cup sugar
  • 1/4  cup water
  • 1/2 cup freshly squeezed orange juice
  • 1 teaspoon cornstarch
  • 1/4teaspoon orange zest
  • 1 tablespoons unsalted butter

DIRECTIONS







  1. Combine the sugar and  water in a small saucepan. Bring to a boil, when it will start boiling,reduce flame.Stir until sugar has dissolved. 
  2. Combine juice and cornstarch in a bowl; pour into sugar syrup. Gently stir  until thick. Add butter and stir until it melts. Keep aside and let it be cool .

What is orange zest?

Orangezest is the top layer of an orange's peel. It adds a bright citrus flavor to a variety of dishes. Take a vegetable peeler,scrap the outer part of orange,using that peeler,you will get orange zest.
