LEMONY BUTTER GRILLED FISH



Fish curry rice  is one of my family's favourite  dish, we cook fish  very often.Fish is light, healthy, full of vitamins and minerals, and omega-3 fatty acids. My daughter finish  her meal if there is some  fish preparation.

 We usually like river  waters fish, but here in Pune we do not get so many river water fishes...so now  we cook some fresh sea fish  also. Few days back,I bought some fish fillets, and my daughter wanted to have something different...so I tried this recipe. This wonderful recipe will make your mouth water when you have a bite of this lemon butter spiced fillets This method is one of the easiest, for whenever grilling outside is not possible. It is also very healthy as it needs less oil..and fishes are not getting  fried here.

First we will  grill the fillets then pour  lemon butter sauce over those grilled fillets.

-----------------------------------------------------------INGREDIENTS OF GRILLED FISH FILLETS 
Fish Fillets - 6 ( any white  fish fillets. .6-10inches each)

2 tablespoons butter, melted

2teaspoons lemon juice

1 -2garlic clove, minced

1tablespoon chopped parsley or Pinch dried parsley

Salt & ground black pepper, to taste

Red chilly flakes -1tsp

1/2 teaspoon vegetable oil

Lemon wedge for garnishing 

2tbsp chopped coriander leaves or cilantro

 

METHOD OF GRILLED FISH FILLETS 
In a bowl, combine garlic, butter, parsley , salt, pepper, lemon juice, and red chilli flakes. ..mix well...

Place the fish  fillets in this mixture.Rub fish fillets with spices. Cover or seal and place in the refrigerator for 1 hour.

 After 1 hour,Remove fish fillets from fridge.

Preheat oven to 450 degrees F (230 degrees C)...keep the oven on grill mode.

Take a grilling  rack lined with aluminium foil,
Place the fish on it .Brush little  vegetable oil over the fish.  Place this rack on the top section  of  the  the preheated oven.

Grill 10 minutes per side or  until fish is easily flaked with a fork.


Transfer to a serving plate...serve  with Lemon butter sauce .


INGREDIENTS OF MAKING LEMON BUTTER SAUCE 

Butter-1/2cup
Lemon Juice-4tbsp
Garlic Pods -4 minced
Salt to taste
Pepper  to tast
Fresh Parsley(chopped ) - 1 tsp



METHOD OF MAKING LEMON BUTTER SAUCE 
Melt the butter in a medium saucepan over medium heat. Add chopped  garlic. .lemon juice, salt, pepper and parsley flakes. Bring to a boil. Cook and stir about 10 minutes, until thickened.

Pour the sauce over the grilled  fish fillets. .sprinkle chopped coriander leaves or cilantro  and serve on the bed of butter rice along with steamed vegetables and french fries



TIPS:-
If you do not have oven. .then you can pan fry fillets  following this recipe.

CHICKEN STEW(BENGALI STYLE )

 Bengali Style Chicken  Stew  with Raw Pappya  


     

                 
 Preparation Time-1hr
Cooking Time -15 minutes
Servings -2

Chicken -500 gm
1medium carrot - cut in cubes
1potato - cut in cubes
1/4Raw Pappya(cut into  small wedges)(optional )
1 onion - chopped thinly
2 tsp ginger paste 
2 tsp garlic paste
1 medium tomato - chopped
2 bay leaves  
5-6 black pepper powder
2 green chillies
1 tsp turmeric powder
2/3 tsp coriander powder
1/2 tsp garam masala powder
2-3 tbs Yougurt 
1 1/2 - 2 cups water
salt to taste
4-5 vegetable oil 

Method:

Marinate the chicken with yogurt, garam masala, 1/2 tsp turmeric powder,ginger  garlic paste  and salt and set it aside. Marinate it for at least a couple of hours. 

In a cooker....add the oil....add chopped onions...Saute  for 2-3 minute until  light  brown. Add green chillies. ..

 Now add in the vegetables, tomato ....mix them well...Cover and let it cook for 4-5 minutes till the vegetables release the water. Now add in the chicken  add coriander, turmeric,black pepper  and garam masala powder...cook for another 4-5 minute..

Then add the salt, water and cover and cook on medium  heat ....after 1 whistle switch off the gas.....if you cook in big saucepan...cook for another 10-15 minutes till it all combine together. 

                          

Chessy Baby Oats Uttapam

Oats are generally considered as a healthy food, Oats contain more soluble fiber than any other grain,  Its daily consumption over weeks lowers LDL or bad  cholesterol, possibly reducing the risk  of Heart Disease. 
If you are bored of eating oats porridge, then this uthappam is a great option to include oats in our diet.Now this delicious and  healthy uthappam is great for breakfast, since it is topped with all healthy veggies, and cheese. Your kids will surely love it.

                              


Preparation Time -20 minutes
Cooking Time - 15 minutes 
Servings -8


For Batter

Ingredients
1 cup powdered oats  (take cooking oats in a blender and make it to a fine powder)
1/2 cup roasted  rava (wheat semolina)
1 cup thick curd
1/2 cup water(if required, add more water)
1/2tsp baking soda
Salt to taste
Ghee or oil for frying

Ingredients For Topping

1 medium onion finely chopped
1-2 green chillies finely chopped
1 medium  capsicum finely chopped
1 medium tomato finely chopped
few coriander leaves finely chopped

Mix all above ingredients  in a bowl and keep ir aside till use
Grated Cheese -1/2cup

Method

Blend together all ingredients of batter adding water,
 Keep this aside for 10 minutes.

                         
Heat a tawa and brush with oil or ghee. When hot add a  small ladleful of batter to the pan.
It will form a thick circle. use the back of the ladle to spread the batter lightly.
Cover and cook till the underside is golden brown,
Add all the ingredients  of topping except  cheese
Then flip over with the help of a spatula and fry till golden brown.
Remove and keep aside.

makes about 6-8 uttapams with this batter.

How to make cheesy uttapams

Place  a thick bottomed non stick tawa  on gas stove...then place a frying  pan on the tawa...and heat it on high  flame ...(see the below pic)

                           
Reduce the flame,place one uttapam on frying pan,add grated cheese on it....cover and cook till cheese is melted completely.

Serve this  Chessy  Baby Oats Uttapam with any chutney  or sauce.
