Kolhapuri Fish Curry

Kolhapur, a city in in the western Indian state of Maharashtra. Kolhapur is a foodie paradise. Kolhapuri food is world famous for its taste.Kolhapur is known for non-vegetarian mises like Kolhapuri mutton or chicken. Today following  Kolhapuri chicken recipe Imade Kolhapuri fish using surmai or King fish .Surmai is  very popular of Maharashtra.

INGREDIENTS
-----------------
Surmai or King fish-500 grams(cut into big pieces )

Salt to taste

Yoghurt-2teaspoon


Onions -1+1(one is sliced and  another  one is chopped)

Ginger paste-1 tablespoons

Garlic paste-1 tablespoons

Tomatoe-1 (chopped )

Cumin seeds-1teaspoon

Cloves-5

Cinnamon-1-1 inch stick

Black peppercorns-6

Poppy seeds (khuskhus/posto)- teaspoons

Dried Coconut ( grated)-1/4 cup(if you do not have dried coconut then you can use fresh  coconut)

Dried red chillies broken-5(If you can , use Kolhapuri chilies)

Coriander seeds-2 teaspoon

Turmeric powder-1/2 teaspoon

Red chilli powder-1/2 teaspoon

Oil-1/4 cup




METHOD
----------
Dry roast cumin seeds, cloves, green cardamoms, black cardamoms, black peppercorns, poppy seeds,red chillies ,coconut and coriander seeds till fragrant. Cool and grind with sliced onions and little  bit water to make a paste.

Mix fish pieces  with salt, yoghurt ,turmeric powder and 1/2 teaspoon red chilli powder and set aside in a refrigerator to marinate for 15 minutes.

Heat oil in a deep non-stick  pan,when  the oil is enough  hot, put fish  pieces  and shallow  fry both the sides until light brown. Remove from heat and keep aside.

Heat remaining  oil in a deep non-stick pan. Add  onions and sauté until golden brown .Add ginger garlic paste and saute  until raw smell of masala goes away. Add chopped tomatoes  and sauté till oil leaves the sides.

Add turmeric powder  and mix.

 Add the coconut masala paste and mix well,cook until  oil gets separated,  add salt.

Add 1 cups of water ..bring  it to boil,when the water will start boiling, add fried fish pieces ,simmer the gas and cook  for 5-6 minutes. 

Serve hot with steamed rice.

LEMONY BUTTER GRILLED FISH



Fish curry rice  is one of my family's favourite  dish, we cook fish  very often.Fish is light, healthy, full of vitamins and minerals, and omega-3 fatty acids. My daughter finish  her meal if there is some  fish preparation.

 We usually like river  waters fish, but here in Pune we do not get so many river water fishes...so now  we cook some fresh sea fish  also. Few days back,I bought some fish fillets, and my daughter wanted to have something different...so I tried this recipe. This wonderful recipe will make your mouth water when you have a bite of this lemon butter spiced fillets This method is one of the easiest, for whenever grilling outside is not possible. It is also very healthy as it needs less oil..and fishes are not getting  fried here.

First we will  grill the fillets then pour  lemon butter sauce over those grilled fillets.

-----------------------------------------------------------INGREDIENTS OF GRILLED FISH FILLETS 
Fish Fillets - 6 ( any white  fish fillets. .6-10inches each)

2 tablespoons butter, melted

2teaspoons lemon juice

1 -2garlic clove, minced

1tablespoon chopped parsley or Pinch dried parsley

Salt & ground black pepper, to taste

Red chilly flakes -1tsp

1/2 teaspoon vegetable oil

Lemon wedge for garnishing 

2tbsp chopped coriander leaves or cilantro

 

METHOD OF GRILLED FISH FILLETS 
In a bowl, combine garlic, butter, parsley , salt, pepper, lemon juice, and red chilli flakes. ..mix well...

Place the fish  fillets in this mixture.Rub fish fillets with spices. Cover or seal and place in the refrigerator for 1 hour.

 After 1 hour,Remove fish fillets from fridge.

Preheat oven to 450 degrees F (230 degrees C)...keep the oven on grill mode.

Take a grilling  rack lined with aluminium foil,
Place the fish on it .Brush little  vegetable oil over the fish.  Place this rack on the top section  of  the  the preheated oven.

Grill 10 minutes per side or  until fish is easily flaked with a fork.


Transfer to a serving plate...serve  with Lemon butter sauce .


INGREDIENTS OF MAKING LEMON BUTTER SAUCE 

Butter-1/2cup
Lemon Juice-4tbsp
Garlic Pods -4 minced
Salt to taste
Pepper  to tast
Fresh Parsley(chopped ) - 1 tsp



METHOD OF MAKING LEMON BUTTER SAUCE 
Melt the butter in a medium saucepan over medium heat. Add chopped  garlic. .lemon juice, salt, pepper and parsley flakes. Bring to a boil. Cook and stir about 10 minutes, until thickened.

Pour the sauce over the grilled  fish fillets. .sprinkle chopped coriander leaves or cilantro  and serve on the bed of butter rice along with steamed vegetables and french fries



TIPS:-
If you do not have oven. .then you can pan fry fillets  following this recipe.

BUTTERY FISH MASALA


I had some fish fillets in the fridge.I wanted to make some rich curry...so made this Buttery Fish Masala.

Buttery Fish Masala  is delicious, thick, creamy gravy. Serve it on a bed of plain boiled rice or with roti,naan or any other Indian bread.

Cooking Time- 1hour 15 Minutes (Including Marination Time )

INGREDIENTS 

Fish fillets (any fish with firm white flesh) skin removed, cut into 2' cubes-500 gms
Lemon Juice - 1
Vegetable Oil-2tbsp
Chopped onions -2 (grind to make a paste  )
Garlic paste-2tbsp 
Ginger paste2 tsps
Coriander powder-1 tsp
Turmeric powder-1/2tsp
Red chilly powder - 1tsp
Garam masala powder -1tsp
Chopped tomatoes, ground into a smooth paste in a food processor- 1Tomato
Butter-1tbsp +1tbsp+1tbsp(For Matination+For Cooking  + For Garnishing )
Milk-1/4cup (at room temperature )
Salt to taste
Black pepper powder - 1 / 2 tsp

METHOD 

Mix the fish with 1tbsp melted butter,lime juice, salt and black pepper powder  in a large, non-metallic bowl. Cover and allow to marinate for 1 hour.

Heat the oil and  1tbsp butter  in a deep pan on medium heat.

Add  the fish pieces  from the fish-spice  marination mix and fry till light brown  for both the sides.Remove aside.


Add the  onion paste. Fry till  golden brown and then add the ginger and garlic pastes. Fry for a minute. Stir very gently.

Now add the tomato paste and remaining part of the marination -spice mix to the fish.Add coriander powder, red chilly powder,garam masala powder  and salt...cook until oil gets separated.

Add fish pieces and mix with gravy. Add milk,mix and cook till  the gravy is reduce to half its original volume. Stir very gently every now and then to avoid breaking the fish up.The gravy  should be dry.

Pour 1tbsp  melted butter  over the fish curry. Mix and cover with lid.  Switch off the heat.

Serve with  Steamed  or any rice..or Roti, Naan or any other Indian bread.





FISH N CHIPS



Fish and chips is a popular dish of England. Battered  fried fish is served with delicious potato chips and tartar sauce.

INGREDIENTS FOR BATTERED FRIED FISH

Fish Fillets -3pcs (each piece size should  be 3 to 5inches)
Egg-1 (lightly beaten )
Plain Flour-1cup
Cold Water-1cup
Vinegar -1tsp
Black Pepper -1tsp
Baking Powder - 1 / 4tsp
Salt to taste
Oil -1cup (for deep fry)

METHOD 

Put fish fillets in a big bowl

Add vinegar and leave it for 15 minutes

In a separate bowl, mix flour, baking powder, salt, pepper , egg and water.

Mix well and make a smooth batter

Dip Fish pieces in this batter

Coat evenly

Heat oil in pan...deep fry for 15 minutes on medium flow until golden

Remove from the oil and drain on absorbant paper.


Serve hot with potato chips and tartar sauce.

Now enjoy your Fish N Chips with potato fries and tartar sauce...if you do not have tartar sauce..you cab have it with mayonnaise  or any other sauce like tomato.




TAWA FRIED FISH MASALA



Being a bengali,I just love fish.All of you know that fish curry and rice our staple  food. Each time I want to make fish dishes quite differently. This is one recipe which i made few days back and loved the combination of it.

Preparation  Time- 10 Minutes 
Marination Time - 1Hr
Cooking Time - 15 minutes
Servings - 2 


INGREDIENTS 

Fish  Marination 

Any Fish (I used Surmai) -4medium  pieces
 Red chilli powder-1 tsp
Turmeric powder-1/2 tsp
Ginger-Garlic paste-1tsp
Salt to taste
 Juice of half Lemon


 Masala Gravy 
Onions -2(paste)
(Tomatoes-1 nos 
Green Chillies-3 nos
Coriander leaves -1/2cup)
Take tomatoes, green  chillies and coriander  leaves  ...grind to make a fine paste(if required, add little  bit water )
Red Chilli Powder-2 tsp
Turmeric Powder-1/2 tsp
Ginger-Garlic Paste-2 tsp
Garam masala Powder -1tsp88Coriander Powder-1tsp
Lemon juice -1/2 of lemon
Salt to taste
Oil-4 tbsp


METHOD 


Wash and clean the fish pieces.

In a bowl marinate the fish pieces with red chilli powder,turmeric powder,ginger-garlic paste ,salt and lemon juice mix well.Keep it for 1 hour.


Heat oil in a non-stick pan ,place the marinated fish and fry them on  medium flame until they are
nicely browned,flip over gently to the other side and fry   till browned.Remove  the fish pieces in  a plate.

Add some more oil in the same pan..add onions  paste, fry until light brown

Add ginger garlic paste

Add tomato, coriander  and green chillies paste..and cook until  the raw smell of masala paste goes away

Add remaining  marination masala,turmeric powder, red chill powder, coriander powder and salt. ..cook until  oil gets separated

Add 1/4 cup warm water...bring it to boil...once the water will start boiling. .simmer the gas. .add fish pieces. ..cover and cook for 5 minutes or until  gravy  dries up.

Open the lid..add lemon juice and garam masala. ..mix well..cook for 2 minutes. Switch off the heat.





Steamed Fish or Bhapa Mach


                                                                   



    Steamed Fish....Bhapa Mach

It is said that Ilish or Hilsa is the queen of  fish in Bengal...we make different tasty recipe with Ilish. ..among them Steamed Hilsa or Ilish Bhapa....this time i bought 1.5 kgs Bhetki ....thought of making Steamed Bhetki  or Bhetki Bhapa  .Bhetki is called Barramundi in english....If you dont have Bhetki or Hilsa...you can make this dish with any fish...like Basa....


                                                              



  
Preparation Time -10 minutes
Cooking Time  (very on different  mode of cooking )
Servings -2


INGREDIENTS:

  • Bhetki Fish(Barramundi ) 4 medium pieces
  • Turmeric powder1/2sp
  • Salt to taste
  • Oil-3tbsp(Mustard Oil  Preferably )
  • Green chilli paste-1tsp
  • Green chillies-4cut into slits
  • Beaten curd -1tbsp
  • Mustard paste-2tbsp(Soak 1tsp yellow and 2tsp black mustard in water for 30 minutes. ..then grind adding with required water to make s fine paste...u can add little bit salt...adding salt prevent thr bitterness of mixture)
  • Cashew paste - soak 5 to 6 cashews in water for 15 minutes ..then grind)
  • Finely grated coconut -2tbsp
  • water...as requirement of gravy
METHOD

  • Wash fish pieces and marinate with  a pinch of salt  and turmeric powder for 5 minutes
  • Heat oil  in a pan. ..and shallow fry the fish pieces ...keep aside
  • Take a big bowl....you can keep all the fish pieces in s single layer
  • Add all the masala paste and powder ..grated coconut...salt...beaten curd...oil...green chillies. And mix them properly. ..add fish pieces ... mix the fish pieces with this mssala...and keep aside for 30 minutes...
Gas Stove Method...

  • Take a small steel tiffin box...place the marinated  fish in it...spread remaining  paste on fish..cover with lid.
  • Pour mustard oil on top
  •  Take a pressure cooker...place  ring in the  pressure  cooker 
  • Pour 3 cups of water into the cooker and place the pan with the fish on the ring.
  • Cover with lid and steam the fish for eight to ten minutes (do not put weight)
  • Serve hot with steamed rice. 

Microwave  Method

  • Take a microwave safe  bowl with lid...add 1tsp mustard oil...and microwave  on medium powder  for 30 seconds...take it out
  • Put the fish pieces  with  marination masala..mix well
  • Add slited green chillies 
  • Pour 2tsp mustard oil on top
  • Put in the microwave  and cook for 5 minutes...take out the bowl...turn the fish very carefully. ..then again cook for 5 minutes...keep on checking  that gravy  should not get very dry...
Serve hot with steamed rice

Oven Method 

  • Take a oven proof pan 
  • Add marinated fish pieces  with  marination  masala
  • Pour 2tsp mustard oil on top...mix well
  • Add slited green chillies 
  • Cover the  bowl with Aluminium  foil....and bake on a preheated  oven  at  240 degree C or 350 F  for 25 -30 minutes.
  • Serve hot with steamed rice
